Thanks to the drying of the grapes on trellises, the bunches concentrate sugars and primary aromas, giving the sip an enveloping density and an alcohol content of 14% vol. Fermentation conducted with indigenous yeasts enhances the most authentic and territorial expression of the grape variety, preserving its earthy notes of berries and dark spices.
The subsequent two-year aging in French oak barrels smooths out Perricone's typically vigorous tannins, enriching the aromatic profile with elegant nuances of vanilla, cocoa, toast, and tobacco. An intense, balsamic, and deep red, it combines the rural tradition of drying techniques with the refinement of French oak.
