IN THE CELLAR: Destemming with gentle pressing, natural decantation before fermentation. Inoculation with selected yeasts. Fermentation in stainless steel tanks at a controlled temperature. Aged on the lees for approximately 4 months.

BOTTLING PERIOD : March/April

ALCOHOL : 13% vol.
